This coffee features tropical fruit notes, sweet mango, and a juicy acidity, with subtle hints of wine. The process is a thorough 48 hour natural anaerobic fermentation and then 30 to 40 day sun-dry. Resulting in a more complex cup with vibrant flavours.

The careful processing by Santiago Quiroga at his Florencia farm in Quindio, makes this coffee truly special. The coffee undergoes natural anaerobic fermentation and is cultivated using sustainable practices. Ripe cherries are hand-picked and fermented for four days, resulting in tropical fruit flavors, complemented by sweet mango and subtle notes of wine.
Post-fermentation, the coffee is dried slowly over 30 to 40 days on solar beds, ensuring an even drying phase that preserves its sweetness and complex profile. This commitment to eco-friendly methods, including completely sun drying and the avoidance of herbicides, allows Alma Silvestre to stand out. No wonder this coffee is among the 55 best coffees of this year's Colombia Land of Diversity.
The Florencia farm stands out for its commitment to eco-friendly practices. By using 100% solar drying and avoiding herbicides, the farm not only protects the local ecosystem but also ensures a sustainable production process. Their state-of-the-art water-saving equipment significantly reduces water usage, allowing the farm to save money that is reinvested into other green practices, making their production even more sustainable.

Founded by Santiago Quiroga after the COVID pandemic, he left corporate life in Bogotá to manage and elevate his father’s farm La Florencia, in Quindío, Colombia. His mission is to maintain Colombian coffee's reputation as one of the best in the world, and he’s doing an amazing job at it.
